Day 111 – March 30, 2011

Today, I met up with RI at the downtown location of the gym to go to a kickboxing class. It was crazy from the moment we got there!! 55 minutes of go-go-go. 556 calories burned 😀

When I got home, I was craving tostadas.. yet again. I’ve been craving them a lot lately, but last weekend’s trip to H-town made me want them even more. I was also craving fresh salsa and remembered I had some tomatillos and serrano peppers.. that’s all I need!

I peeled and washed the tomatillos, washed the peppers, and pulled out some garlic. I wasn't sure whether to boil the garlic so I called my mommy

First, you put the peppers to boil, then the tomatillos.. garlic isn't boiled

Then I put the tomatillos and a couple of peppers plus garlic and the boiled water in the blender and blended away! I didn't have cilantro or whiteish onions, so I left them out.

The salsa was hot enough with 2 peppers, so I went and put it on my tilapia tostadas

*Drool* It was so good.. I’m hooked on tilapia and Eddie loves it too! I love to see his little tail shake in excitement when he smells it.

Tomorrow, I’m taking Eddie to the vet Yay!!

Day 110 – March 29, 2011

This morning, I had a hard time deciding what I wanted for breakfast. I was craving protein French toast and pancakes but I was out of milk.. that meant no cereal or oatmeal either. I looked in the fridge, and I was excited to find Canadian bacon that was still good, plus Pepperjack cheese, eggs, and sandwich thins!

Brown eggs.. they aren't any better than white ones. My sis told me when she used to travel in the Eggmobile around our home province promoting Eggs ('An egg a day is okay!')

Toasted tastes better!! No butter though...

Tada!! It was super delicious and it hit the spot!

This was my brother’s favourite when he came to visit.. I can’t remember if I’ve made some for you.. but I guess I could convert them to breakfast tacos for you :p

Day 109 – March 28, 2011

Today was crazy chilly.. I won’t say cold since it really is cold up north. On Saturday, we had 90* weather , and this morning, it was in the 50s. After work, I went home and made dinner. For dessert, I had a dark chocolate/raspberry “popsicle.” From a previous post, you can see that Eddie is a fan of them so when he saw me eating one, he marched right over.

He stood on the Macbook and pressed the brightness control button and turned the screen off. I had to put him on the ground as he was pushing against the screen. It doesn't bend that way!

After he was done eating, he wrapped himself up in my blanket

The cats were really chilly so they both slept on me and my blankie

Tomorrow’s supposed to be a little warmer… can we just have spring… none of this jumping from winter to summer back to winter. Thanks 😀

Day 108 – March 27, 2011

Today, I really thought about going to the gym.. but getting out of bed to go to yoga just didn’t seem appealing.. especially as I’ve been going to bed so late. Then, it took me forever to figure out what I wanted to have for breakfast so I just had some grapefruit. I got some grapefruit spoons at the grocery store a while back and I have loved using them. After eating half the grapefruit, I wondered if I eat it without breaking the little “walls.”

Success!

I continued to watch Nip/Tuck.. well I don’t know that I was actually watching it, I usually use TV for background noise.

Anyway, it did get rather annoying with all the recycling of partners. At least I got it out of my system!

Day 106 – March 25, 2011

This evening, I finished prepping all the baked goods to ship out to you… This is the last part I had to put together.

One ingredient is gelatin! The biggest pain in the procedure

Yay.. now all the baked goods are done and ready for shipping! To celebrate, I had a popsicle and naturally, someone was interested in tasting it.

He even wanted to eat the stick

Day 105 – March 24, 2011

After I got home today, I baked 3 things. This is a new recipe I tried. Any guesses?

Hint: they're not cake balls

Anyhow, they were fabulous in person.

Despite all that baking, I didn’t finish the cake balls or another baked surprise… that will be for tomorrow!

Day 104 – March 23, 2011

After I got home from the office today, I let the kitties out. Dusty thought it was too hot in the balcony so he came back in but was still wanting to spend some time in the sun.

Day 103 – March 22, 2011

Today was a regular Tuesday… I worked from home and then went to the gym after work. I went to grab some groceries after the gym. Once I was home, I let EE know that she could pick up Mirana as she was home from her vacation. I got all the stuff ready for EE and I guess Mirana was ready to go home.

Day 102 – March 21, 2011

This morning, I opened the bedroom door for the kitties to come in. They ran to the window…

The rest of my day was pretty uneventful… I went into the office, went to work out afterwards, went home.. and I went to bed at a decent time! Sorry I only took one photo today!

Day 99 – March 18, 2011

Today, I pretty much walking around asleep for the first half of the day. I had to bake the cookies I had rolled out last night and then after work, I decorated them. While I was prepping the royal icing, KS called to meet up. I offered to meet her half way.

Once I got home, I started decorating the cookies. This was by far, the worst time I’d had with royal icing.. I got it all over my dress, the counter, and even the floor. I will not be trying to wrap the icing in plastic wrap before I put it in the decorating bags again! Anyway.. I was glad to have finished the cookies so they can fully dry before I drive out to my cousin’s.

They were far from perfect, but they turned out alright 🙂

It’s late and I should get up early to drive out tomorrow…
